Blueberry Oat Bars

Cooking Instructions

Preheat the oven to 350°F. Line a 9x9" baking pan with parchment paper and set it aside. In a large bowl, mash the bananas. Then whisk in the eggs, milk, almond butter, vanilla and sugar. Then fold in the oat flour, rolled oats, baking powder, salt and cinnamon.

Fold in 3/4 cup of the blueberries and pour the mixture into the prepared pan. Then sprinkle the remaining 1/4 cup blueberries over the top. Bake for 32-35 minutes, or until a toothpick comes out of the center clean. Let them cool before drizzling over the yogurt glaze.

In a small bowl whisk together all the ingredients for the yogurt glaze and drizzle over the top. Then cut into 9 even bars. Store in the fridge.
