Onion Potato Subzi

For this Women’s Day celebration, I chose to share something very simple. I may cook many different recipes, but when it comes to my personal comfort food, I always return to onion–potato sabzi or masala vegetable khichdi.
I love these dishes because of their simplicity. They can be made with minimal ingredients, yet they are full of warmth and satisfaction.
These recipes also remind me of my grandmother’s cooking. She never offered many options in the kitchen, but the food she made had a special love and comfort. We could eat the same meal every day and still feel happy and nourished.
Sometimes, the simplest food carries the deepest memories. For me, these humble dishes are a small way of celebrating that feeling.
Onion Potato Subzi

Add oil in the pan. Once oil is hot, add mustard,jeera and asafoetida. Add fresh grounded green chillies, ginger and garlic. Add chopped potatoes and onions. Mix it well.

Add salt. Mix it well and cover it and cook for some time on low flame. Once it is cooked, add red chilli flakes and chopped fresh coriander leaves. Mix it well. Continue to cook. Serve hot with Bajri rotla. Enjoy 😍
Tips
Cook without adding water.
