Pour the soy milk and heavy cream into a small saucepan. Heat over medium until it comes to a boil.

Once boiling, gradually add the panna cotta mix while whisking. Boil for 4-5 minutes, then pour into 4 glasses or molds. Let cool for about 1 hour.

Meanwhile, prepare the mango: peel it with a vegetable peeler, slice it with a knife, then cut into small pieces.

Place the mango pieces in a skillet with the strained juice of one lemon and the sugar. Cook for 3-4 minutes, then let cool.

Once cooled, blend the mixture in an electric blender until smooth. Pour into a small bowl.

After the panna cotta has set, spoon a layer of mango coulis over each serving. Top with chocolate shavings and refrigerate for another 3-4 hours. Remove from the fridge 20 minutes before serving.
