Pea, Spinach, and Cauliflower Vegetable Curry

Separate the green peas and set aside.

Wash and finely chop the spinach.

Heat oil or ghee in a pan. Add all the vegetables, then add the powdered spices, salt, onion, and tomato. Mix well.

Cover and cook on low heat until the vegetables are tender, stirring occasionally. When the vegetables release oil, your curry is ready. Serve hot with roti, paratha, or rice. This dish is very tasty, healthy, and easy to make.
