Gluten Free Peanut Butter Cookies Aldi’s Boxed Cake Mix Cookie Hack

Ingredients

40 cookies
  1. 1/2 cupsoftened butter
  2. 1 cuppeanut butter
  3. 1/2 cuppacked brown sugar
  4. 2eggs
  5. 1 boxAldi Gluten Free cake mix
  6. 1 cupDixie Sugar Golden low processed Sugar Crystals

Cooking Instructions

    Preheat oven to 375
    In stand mixer bowl use the whip attatchment and whip softened butter for 30 seconds.
    Next, add peanut butter and combine.
    Next, add brown sugar and continue to whip till just becoming fluffy or the color lightens as air is introduced

    Using the beater attachment - Add two room temperature eggs and beat until eggs are combined and you can tell there ir has been enough air introduced during the beating process to create a mix with a light density.

    Add the box of Aldi GF cake mix and begin by mixing slowly to incorporate then increase speed to thoroughly beat ingredients until the dough begins to pull clean away from sides of mixing bowl.

    Pour dixie crystals into a shallow bowl and set by dough bowl. Using a cookie scoop, dip out dough BUT do not roll into balls. Rather, drop the round side into your bowl of dixie crystals and completely cover the round cookie. Leave the flat bottom un-sugared or they will burn during the cooking process.

    After your cookies are covered in crystals, bake 9 minutes being careful to not over bake. Bottoms should just begin to turn brown and the tops will have developed grooves or splits from the rise of the dough. Again, be careful not to over bake. *My oven bakes hotter in the back so I set a five minute timer, turn the rack and back another 4 minutes until done.
