Heat olive oil in a non-stick pan.

Now add onion and sauté till golden brown on a medium heat.

Now add garlic and cook for 1-2 minutes or till golden colour.

Add tomatoes, salt and sauté for a minute and cook till tomatoes get pulpy and oil separates.

Now add red bell pepper and add into the mixture, add cumin powder, paprika adjust the salt, add ½ cup water and mix well.

Heat another pan and transfer the tomato onion mixture and make cavities with the help of spoon.

Break one egg in a small cup and pour into the prepared cavity and repeat the process thrice Cover and cook for 4-5 minutes.

Sprinkle salt and garnish with coriander leaves. Serve.
