Press tofu and cook rice

Toss cucumbers with 3 tbsp rice vinegar and salt. Set aside.

Stir together 1/4 cup mayo, 2 tbsp chili crisp, and a bit of rice vinegar until it's a drizzly consistency.

Stir together 3 tbsp cornstarch, 2 tbsp olive oil, 2 tbsp soy sauce, and a bit of Cayenne pepper and whisk. Add the tofu and coat.

Cook tofu on stove until crispy.

Add rice, tofu, cucumbers, avocado slices, and spicy mayo. Top with sesame seeds.
