Use slightly stale croissants as they absorb custard better without becoming overly soggy. Don't soak croissants for too long; a quick dip is sufficient to prevent them from falling apart.

To store leftover croissant French toast effectively, Place the cooled French toast in an airtight container. It can be stored in the refrigerator for up to 3 to 4 days. Wrap each piece of French toast in plastic wrap or aluminum foil and place them in a freezer-safe container or bag for up to 1 month.
When ready to eat, thaw frozen slices in the refrigerator overnight. Reheat them in a microwave at 30-second intervals until warmed through, or for best results, reheat in a hot buttered skillet on the stove until crispy.

Ingredients

  1. 2 cupsmilk
  2. 1/4 cupsugar
  3. 2eggs
  4. 1/2 tsp.vanilla essence
  5. 1 cupall-purpose flour
  6. 2 tsp.baking powder
  7. 6croissants, day-old, sliced lengthwise
  8. 1banana, sliced
  9. 1peach, chopped
  10. 2 tbsp.honey
  11. As required, butter/oil

    Preheat oven 200F and line a baking sheet with foil.

    In a large bowl whisk together milk, sugar, eggs, salt and vanilla until smooth.

    Add flour and baking powder, stirring to combine until there are no lumps.

  4. 4

    Heat a skillet with oil/butter.

  5. 5

    Dip croissant halves in batter, allowing excess to drip back into bowl. Work in batches.

  6. 6

    Arrange the croissants in single layer in skillet and cook until golden brown, from one side. Flip and cook till golden brown.

  7. 7

    Remove to baking sheet and place in oven to keep warm.

  8. 8

    Serve with fruit and drizzle of honey.
