I used less sugar, you can use more.
I had some ginger to use up so made crystallised ginger sweets and from the left over syrup I got ginger syrup which is great spread on crackers I even added it to make flapjack.

Grate your ginger and chop your ginger to your required size.

Boil the ginger in water first for about 15 minutes then add the sugar and boil for a further 15 minutes add more water if needed.

Take ginger from pan and spread out on a plate or container sprinkle on some sugar give them a roll around and let them dry overnight.
Keep the remaining syrup to use for cooking or to spread on toast or crackers.
