I usually post this recipe when making turkey, but since you can make it just as well from leftovers and turkey carcass, here it is for reference. Freezes well all year.

Ingredients

1 hour
20 cups
  • Any amount of cups of Turkey trimmings, organs, and leftover bones
  • Per cup of turkey, 1/2 pound:
  • 1 CupWater
  • 1garlic clove
  • Pepper, flaked sesalt
  • 1 TspBouillion powder
  • 1 TbsGrassfed butter
  • 1 TbsFlour
  • Equipment: dutch oven, lid, 3 cup plastic gravy tubs with lid
  • Cost: turkey parts free, grassfed butter, bouillion paste, flour, garlic, other, 20 cents per cup

    Trim turkey, cut in pieces to brown

    Brown in cast iron dutch oven with grassfed butter

    Brown all sides, simmer slowly to release flavors.

    When meat falls off the bone, scrape with fork. Dispense bones in garden fermenter. Chop meat in food processor. Add meat back to butter, add water, bouillion powder, flour, simmer till thick, taste, add spices, freeze in tubs.

My grandparents and parents taught me growing, cooking and preserving home grown fruits and vegetables, eggs, meats and fish. I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
