Pre-heat your oven to 400 degrees. Cut the loaves and heavily butter the inside of each side. Split the cheese between one half of each loaf. Place the dressed loaves on a pan, place in oven, and remove once cheese is melted (~fifteen minutes).

Dice the tomatillo, jalapeño, and dill pickle spears.

Dice the garlic and mix with oil into the al pastor meat. Put a sauté pan on high heat. Satuté the MEAT on a base of oil / butter until browned, approximately ten minutes.

Remove the bread from the oven. Spread the salsa verde on top of the loaf half with melted cheese. Evenly distribute the GARNISH across the salsa. Add the al pastor to the other half of the other loaf half.

Assemble your sandwich (meat on bottom) and cut in half. Serve with sour cream to help cut the spice heat if / as necessary.
