Boil the tomatoes. Once cooked, blend them with 1 clove of garlic, a little salt, and a pinch of sugar. Season with oregano.

Prepare the masa by adding a pinch of salt, baking powder, and a splash of water. Knead until the dough is smooth and manageable.

Divide the dough into 6 balls. Shape each into a thick disk, like a tortilla but about 1 1/4 inches (3-4 cm) thick.

Place the disks on a hot griddle or skillet. Cook for about 3 minutes on each side.

Pinch the edges to form a rim around each sope.

Spread a layer of refried beans on each sope.

Add your filling—this time, chorizo with potatoes.

Top with lettuce, crumbled cheese, sweet tomato sauce, and hot sauce to taste. If you like, add a little sour cream.
