After carbonara being made for me a few times here in England I discovered it was wrong all along! Everyone made it with cream with made it far to rich and stodgy. Visited Rome for my honeymoon and found the correct way to cook this dish.

After carbonara being made for me a few times here in England I discovered it was wrong all along! Everyone made it with cream with made it far to rich and stodgy. Visited Rome for my honeymoon and found the correct way to cook this dish.

Fill large pan with boiling water and put pasta on to cook

Heat frying pan with olive oil and the onion after chopping it finely.

Once the onion has been cooked and sweated a while on a low heat add your bacon which has been chopped into small lardons and also add your garlic paste (I find about a teaspoon is enough to give a real punch of flavour). Fry until bacon becomes crispy.

Take pasta off the heat once it is cooked still slightly al dente. Strain the water away. Add a drizzle of olive oil to your pasta now to stop it from sticking.

Take your crispy bacon and onion and tip into your pasta. Crack the eggs into your mix and stir vigorously. The heat from the pasta and bacon will cook the eggs as they're stirred in.

Serve your carbonara on a plate or bowl and add some Parmesan to garnish.
