Wash the quinoa 3 to 4 times with water. Drain the water and keep the quinoa aside.

In a kadai or a non-stick pan, heat oil and add the whole spices - Cinnamon stick, cloves, cumin and bay leaf. Fry it for a minute.

Then add the sliced onions and saute until they are soft. Once the onions are sauteed well add mint, ginger garlic paste, green chillies and saute well... Once everything is sauteed add tomatoes and vegetables and saute well...

Add the spice powders - turmeric powder, red chili powder, garam masala mix well. Now add the quinoa and mix well..

Add salt, 4 cups of water for 2 cup of quinoa. Let it come to a boil.
Then simmer and cook covered until the quinoa is cooked and all the water is evaporated (about 15 - 17 minutes). - 6
If there is some moisture left after the quinoa is cooked, you could open the lid and let it evaporate, stirring frequently. Finally add ghee (optional), mint, lemon juice mix well... Cover for 10 minutes and then serve...
