Ingredients

1 serving
  1. 2/3 cupcooked chickpeas (about 80 grams)
  2. 2.5 ozcooked Spanish chorizo, sliced (about 75 grams)
  3. 1onion
  4. 1 clovegarlic
  5. 1bay leaf
  6. 1 teaspoonsmoked paprika (pimentón de La Vera)
  7. 1 tablespoonhomemade tomato sauce
  8. 1 tablespoonwhite wine (20 ml)
  9. 3 tablespoonschicken stock (50 ml)
  10. 1 teaspoonflour
  11. 1/2 teaspoonground cumin
  12. 2 tablespoonsgrated Parmesan cheese
  13. Chopped parsley

    Brown the sliced chorizo in a saucepan. Set aside.

  2. 2

    In the same saucepan over low heat, add the finely chopped onion and garlic to deglaze. Cover and cook until softened.

  3. 3

    Add the paprika, cumin, tomato sauce, flour, and white wine. Mix well and let it reduce.

  4. 4

    Add the chicken stock and chickpeas. Once heated through, add the Parmesan cheese and stir until creamy. Season with salt and pepper to taste.

  5. 5

    Add the chorizo slices back in and let everything heat together.

  6. 6

    Turn off the heat and let it rest for a few minutes before serving. Sprinkle with chopped parsley and more Parmesan if desired.
