First of all cook the rice till 80%

After that, heat ghee in a pan and fry the cashew nuts,keep it aside.

Then add mustard, cumin seeds, fenugreek seeds, dry red chilli,cloves and cinnamon saute for few seconds. Then add the peanuts,coconut chips and saute it for few seconds. Add green chillies and curry leaves.

Now Add desiccated coconut and add rice mix it well. Add cashews, salt and coriander in it and mix it well, cover for 2-3 minutes and let it steam.

Tasty coconut rice is ready. Served hot with dal fry and curd.
