Ingredients

  1. 2 cupsCooked basmati rice
  2. 2 tbspwhite butter
  3. 1 tbspchopped garlic
  4. 2 tbspchopped spring onion white part
  5. 10blanched broccoli florets
  6. 2 tbspboiled corn kernels
  7. 2 tbspchopped carrots
  8. 2 tbspchopped french beans
  9. 1 tbspchopped green capsicum
  10. 1 tbspchopped red bell pepper
  11. 1 tbspchopped yellow bell pepper
  12. 1 tbspdark soy sauce
  13. 1 tbspred chilli sauce
  14. 1/2 tspred chilli powder
  15. 1 tspblack pepper powder
  16. 1 tspsalt
  17. 1 handfulchopped spring onion

Steps

20 minutes
  1. 1

    Heat white butter in a wok or a pan. Add the garlic and sauté for some seconds. No need to brown the garlic.

    Add the spring onions whites and sauté for about 2 minutes.

    Then add finely chopped french beans, carrots.. Stir fry french beans, carrot for 2 to 3 minutes over medium to medium-high heat.

    Add the remaining finely chopped veggies, including broccoli and corn. Increase the heat to a high to thoroughly cook all of the vegetables.

    You have to continuously toss and stir while frying so that the veggies are uniformly cooked and do not get burnt.. The vegetables have to be stir-fried, until they are almost cooked and yet retain their crunchiness and crispiness. Stir-frying vegetables on high heat takes about 4 to 6 minutes. Add the soy sauce, Red chilli sauce Stir quickly...

    Add cooked and cooled rice.
    Stir fry for a few minutes until the sauce has coated the rice well

    Finally add spring onion, Red chilli powder, pepper powder, salt... Keep a check when adding salt, as soy sauce already has salt in it.

    Serve the vegetable fried rice hot as it is or with your favorite side dish...
