Start by shredding the carrots, cutting the green beans into long strips, and slicing the bell peppers into strips after removing the seeds. Since carrots need fat to help the body absorb fat-soluble nutrients, lightly stir-fry them in a non-stick pan with a little brown rice oil over low heat until they turn slightly red, then set aside.

In the same non-stick pan without washing it, place the pre-seasoned chicken breast and sear both sides until browned (it doesn't need to be fully cooked). Then, use kitchen scissors to cut it into bite-sized pieces.

Even if the chicken looks only half-cooked after cutting, don't worry. Add the green beans, bell peppers, and previously stir-fried carrots back into the pan and stir-fry together.
