Make a checklist, keep all essentials close by

Take the flour, veggies, and cumin seeds in a bowl. Add 2tbsp oil. Mix with your fingers to coat the flour and to make a crumble. Add curd, mix. Add warm water, mix, knead well for 5-20 minutes> make a soft dough. Cover with a moist towel, rest in a warm place for 20-30 minutes.
Pinch the dough to make small balls. Cover and rest for 10 minutes. Use a parchment paper to flatten

Keep a skillet over medium high flame. Grease with a tsp oil. When hot enough, transfer the roti from parchment paper to the skillet, brush tsp oil on the top, roast the rotti, flipping it every 10 seconds. Flip to the other side and cook until golden brown on both sides. Remove from the stove. place them on a serving plate. keep covered with a towel

Serve hot or at room temperature. You may serve the rotties with chutney, vegetable masala curry. Curd, pickle and etc. Enjoy the aromatic flavorful healthy roties
