Prepare the ingredients: Peel the moringa pods and cut them into 2-inch pieces.

Make the curry paste by pounding the dried chilies, shallots, garlic, and shrimp paste together. Add the canned fish and continue pounding until smooth, or to your desired texture.

Bring water to a boil. Add the curry paste, then add the moringa pods. Season with coconut sugar, fish sauce, and tamarind paste. Adjust the flavor to your liking.

Once the moringa pods are tender, ladle the soup into bowls and serve hot.
