Prepare the dough:
In a bowl, combine warm water and sugar. Sprinkle the yeast over the water and let it sit for 5-10 minutes until frothy.
Mix in olive oil, flour, and salt. Stir until a dough forms, then knead for about 5-7 minutes until smooth. - 2
Cover the dough with a clean towel and let it rise for 1 hour, or until it doubles in size.
Preheat the oven:Preheat your oven to 375°F (190°C).

Assemble the rolls:
Once the dough has risen, roll it out into a rectangular shape on a floured surface.
Sprinkle half of the mozzarella cheese over the dough, and layer the pepperoni slices on top. - 4
Roll the dough into a log shape, sealing the ends. Cut the log into 6-8 equal-sized pieces

Bake:
Place the rolls onto a baking sheet lined with parchment paper. Brush each roll with melted butter, then sprinkle the remaining mozzarella cheese over the top. Optionally, add garlic powder and oregano.
Bake for 15-20 minutes, or until the rolls are golden and the cheese is bubbling. - 6
Remove the rolls from the oven, let them cool for a few minutes, and serve warm. Enjoy with marinara sauce for dipping if desired.
