Combine, Wash and Soak the dals for 4-5 hrs. Drain out all the water. Grind it coarsely without adding a single drop of water. There should be some whole Dal grains seen. This is an absolutely important step. If you grind it even a little smoother than required, the batter will be loose and hence the vadas will absorb oil. The texture will also not be as it should be.

Look at the consistency and the texture of the batter. Add the spices and beat in a single direction. Beat until the mixture gets lighter and airy. You'll have to beat for good 5 min. Use a beater for convenience.

Heat up oil and drop lemon size vadas in oil. It's important to make them big size as lemons so for the crisp outer layer and soft inner layer. Fry them on medium to high heat while stirring until golden grown and crisp all around. Serve hot with onions and fried green chillies.
