There's nothing better than a quiche to use up vegetables that are starting to lose their freshness but are still great to eat.

Dice the vegetables and sauté them in a pan with a little extra virgin olive oil. Let cool and set aside.

Sauté the bacon, let cool, and set aside.

Roll out the pie crust and place it in a round baking dish, allowing the edges to hang over the sides. Carefully mix the eggs with the cream, season with salt, and add a bit of pepper to taste. Fold the excess crust over the edges. (see photo)

Cover the pie crust with the vegetables and bacon, pour the egg and cream mixture over, and bake in a preheated oven at 350°F (180°C) for 30 minutes (always check).
