Let's start by making khichdi first for this clean and wash urad daal and soak in water for 2 hours. Now similarly clean and wash rice and soak for 1 hour. By the time Let's prepare for other ingredients. Peel, wash and slice the onion. Now in a big vessel add 1 cup oil when the oil gets heated add cumin seeds and asafoetida to it. When cumin splutter add ginger and garlic paste to it and cook it until the rawness goes away. Then add the sliced onions and cook till it gets golden brown colour.

Now add the spices salt, red chilli powder, turmeric powder and sabzi masala. Mix them all very well add 1/2 cup water and cook so that the spiced won't burn. When the water dries out and the oil ooze out and the aroma start to come then add the soaked urad to it and cook for 3-4 minutes. Then add the soaked rice and mix them gently so that the rice don't break. Saute the rice and lentil along with the spices till the time all the water dries out then add 1.5 litre water to it mix it well.

Then cover it and cook on high flame. When it starts to boil lower the flame and stir it once cover it and cook it till it's completely done. It takes almost 30 minutes to be done completely. Every rice needs different amount of water check on yours. While the khichdi is on simmer let's prepare the rest of the ingredients.
For fried onions in a pan add 1/4 cup desi ghee add 1 medium size sliced onion to it. Cook it till it gets a beautiful brown colour and use it with the remaining ghee. - 4
We will need that ghee in the khichdi while serving.
For papad simply roast them on skillet or microwave then for a minute. You can use any papad of your choice.
For raita take yoghurt in a bowl add all the ingredients mentioned above in the ingredient section and mix well and the raita is ready. You can make any type of raita you like.
For green chutney take all the above-mentioned ingredients in the ingredient section of green chutney along with the ice cubes in a mixer grinder and grind it. - 5
Grind it to a smooth paste and the chutney is ready.
For the salad take all the ingredients of salad peel and wash them then chop them. When all are chopped mix them and add salt, lemon juice and chopped green chilli to it mix it well again and the salad is ready.
For aloo bharta boil 6 medium size potatoes then peel them and crush them into some big and some small chunks. Then chop the onion, ginger and garlic and add to the mashed potatoes along with the spices of aloo bharta mentioned. - 6
Once all the ingredients are added them mix them all very well with the chopped coriander leaves and the bharta is ready. Now all the ingredients are ready let's check on the khichdi. Stir it gently check whether the lentil is cooked or not if done off the flame and let it rest for 10 minutes then serve it hot with all the prepared ingredients and enjoy the season.
