Ingredients

  1. 6boneless chicken thigh fillets
  2. 1 packagemixed mushrooms with intense flavor
  3. 1red onion
  4. 1green bell pepper
  5. 3-4 clovesblack garlic, depending on size
  6. 1small glass of dry sherry or manzanilla wine
  7. Juice of half a lemon
  8. Spices: coarse salt, black pepper, herbes de Provence, and an optional touch of piripiri

    Skip this step if you want to serve the dish with another side of your choice. Prepare 1 cup of rice with 2-3 cloves of garlic, a bay leaf, salt to taste, and a splash of extra virgin olive oil in enough water until absorbed, and set aside. Meanwhile...
