Ingredients

Serves 3 servings
  1. 12 ouncespotatoes, peeled and cut into 1 1/2-inch pieces
  2. 5 2/3 ouncescarrots, cut into 1 1/2-inch pieces
  3. 8 3/4 ouncesgreen beans, cut into 1 1/2-inch pieces
  4. 1/2 ouncewhite part of green onion, thinly sliced
  5. 1 cantuna, about 5 2/3 ounces
  6. 2hard-boiled eggs, each cut into 4 wedges
  7. Dressing
  8. 3 tablespoonsextra virgin olive oil
  9. 1 tablespoonbalsamic vinegar
  10. 1 clovegarlic, minced
  11. Salt to taste
  12. Crushed red pepper to taste

Steps

  1. 1

    Prepare the salad dressing: Mix the extra virgin olive oil, balsamic vinegar, minced garlic, salt, and crushed red pepper. Stir well and set aside.

    Cook the vegetables: Boil the potatoes and carrots in salted water until soft, about 15-20 minutes. Drain. In the same pot, blanch the green beans for about 4-5 minutes. Drain and let cool slightly.

  3. 3

    Combine ingredients: In a suitable salad bowl, add the potatoes, carrots, and green beans from step 2. Add the tuna and green onion, and gently mix.

  4. 4

    Add the dressing: Pour the prepared dressing over the salad and gently toss to coat the ingredients evenly.

  5. 5

    Serve: Top with the hard-boiled eggs and serve immediately.
