A budget-friendly salad that's high in fiber (potatoes and green beans), good for your eyes (carrots), rich in quality protein (eggs and tuna), and heart-healthy (extra virgin olive oil) ✌🏼

Prepare the salad dressing: Mix the extra virgin olive oil, balsamic vinegar, minced garlic, salt, and crushed red pepper. Stir well and set aside.

Cook the vegetables: Boil the potatoes and carrots in salted water until soft, about 15-20 minutes. Drain. In the same pot, blanch the green beans for about 4-5 minutes. Drain and let cool slightly.

Combine ingredients: In a suitable salad bowl, add the potatoes, carrots, and green beans from step 2. Add the tuna and green onion, and gently mix.

Add the dressing: Pour the prepared dressing over the salad and gently toss to coat the ingredients evenly.

Serve: Top with the hard-boiled eggs and serve immediately.
