I added a couple of tenderstem broccoli but you can leave it out or use something you prefer instead.......

You can do the puri mix the day before if you wish but as long as it stands for an hour you can make it just before.

Put the flour, semolina powder in a bowl and mix in the water and oil to make a dough ball. Knead on a floured surface for 5 minutes. Place back in the bowl and allow to stand for an hour.

Divide the dough into 4 and roll them out in the shape of a pizza but about 3mm thick.

Using a shallow pan big enough to take the puri, add enough oil for half an inch depth. Bring the oil up to about 150 degrees and carefully place a Puri into the oil. Allow to cook for two minutes or when that side of the puri is a golden brown. Turn it over and do the other side, place on kitchen paper. Repeat the process with the other three.

Empty the oil out of the pan into a suitable container. Using the same pan, heat up a glugg of oil then add the onions, garlic, ginger and chilli. Stir fry together until the onions begin to soften.

Add the stock cube and all the spices. Stir fry for one minute.

Add the chopped tomatoes and carry on stir frying until the tomatoes break down. Add a cup of water, mix in well and simmer until the sauce begins to thicken.

Add the tomato puree and the sugar, stir well and place to one side

In another shallow pan heat a tablespoon of oil and add the prawns. Stir fry for three to four minutes. Add enough of the sauce for two portions in with the prawns, continue to stir fry adding the chopped coriander and the juice of a lime.

Place a Puri on a suitable plate and top with the prawns and sauce. Serve and enjoy
