Who doesn’t love perfectly crispy roasted potatoes? This easy recipe will give you crispy-on-the-outside, fluffy-on-the-inside potatoes. Best of all - no deep frying required! Makes for the perfect side dish.

Preheat oven to 400F.

Cut the potatoes into 1 inch cubes.

Boil potatoes in a pot of boiling salted water for about 10 minutes or until you can poke a fork through them.

Drain the potatoes completely.

Put the potatoes back into the pot and add salt plus seasonings.

Shake the potatoes vigorously to agitate the edges. This will help develop the crust on the potatoes.

Let the potatoes dry for 5-10 minutes. Allowing steam to evaporate will help potatoes crisp up.

Line a baking tray with foil and add 3 tbsp of oil. Spread the potatoes on the tray. Bake for 20 minutes.

Flip potatoes around and bake for another 20 minutes. Toal baking time is 40 minutes.

Remove from oven and enjoy!
