Instant Pot Shrimp Spaghetti

Easy peasy, no mess meal ready in under 30 minutes!

Ingredients

30 minutes
2 servings
  1. 300 gSpaghetti, snapped in half
  2. 400 graw peeled shrimp
  3. 1 tbspminced garlic
  4. 2 tbspOlive oil
  5. 4 tbspsalted butter
  6. 1Zest and juice of a lemon
  7. 1pince of pepper
  8. 1 pinchchilli powder or cayenne pepper
  9. 450 gchicken stock, (used 1 bullion dissolved in boiling water)
  10. 2-3spring onions, sliced
  11. Grated parmesan (optional)
  12. Crushed chilli's (optional)

Cooking Instructions

30 minutes

    Turn instant pot to sauté mode. Add the butter and olive oil. Once melted, add the garlic and sauté for about a minute.

    Add the spices and the lemon zest and juice. Next, add the stock.

  3. 3

    Once the stock boils, add the pasta in crisscross and give it a very slight mix with a spoon.

    Add the prawns. Close the lid. Set pressure cooker on high for 12 minutes. Give it a good mix. I cooked mine for 10 minutes, and some of the pasta was still slightly uncooked, so I switched to sauté mode and finished cooking the pasta by adding small amounts of water until fully cooked.

    Top with the spring onions and sprinkle parmesan and crushed chilli's if using. I had run out of parmesan, so I used some shredded mozzarella instead.
