Making the Dough:
1. In a mixing bowl, combine the bread flour and salt.
2. Gradually add warm water while mixing until a dough forms.
3. Knead the dough with a stand mixer or by hand until smooth and elastic, about 5-7 minutes.

Preparing the Filling:
1. In a mixing bowl, combine the chopped Chinese chives with the cooking oil. Mix well and set aside.
2. Crack the eggs into a bowl and beat them well.
3. Heat some cooking oil in a frying pan over medium-high heat.
4. Pour the beaten eggs into the pan and scramble until fully cooked. Allow the eggs to cool.
5. Add the cooled scrambled eggs to the bowl with the chopped chives.
6. Season with salt, black pepper, and oyster sauce. Mix well and set aside. - 3
Assembling the Dumplings:
1. Roll out the dough on a lightly floured surface to a thin sheet.
2. Cut the dough into circles.
3. Place a small amount of filling in the center of each dough piece.
4. Fold and seal the edges to form dumplings. - 4
Cooking:
1. Boil a pot of water with a pinch of salt.
2. Add the dumplings and stir gently.Just be sure not to boil too many at once, or they might break.
3. When the water boils, add a cup of cold water. Repeat this twice until the dumplings float and are cooked through. About 10-12 minutes.

Storage Tip: To store the dumplings, freeze them before cooking. When you’re ready to eat, boil them straight from the freezer.
