Pork Chop Scalloped Potato Bake

#CA2025 One dish meal. This is quick,easy and a great option for those busy nights when cooking is almost out of the question. This can be easily halved for two servings. This recipe called for cream of mushroom soup and my family refuses to eat mushrooms so I substituted cream of celery. I also added frozen broccoli to complete the meal.

Ingredients

30-45 minutes
4-6 people
  1. 2 boxesscalloped potatoes (set seasoning packets aside)
  2. 1 cupshredded cheese (use what you like)
  3. 10 ouncecan cream of mushroom soup or substitute with another creamed soup (celery, chicken, or maybe cheddar cheese soup.)
  4. 1/2 cupsour cream
  5. 2 1/4 cupsmilk
  6. 12 ouncebag of frozen broccoli (optional)
  7. 3/4 cupcanned fried onion rings (optional)

Cooking Instructions

30-45 minutes

    Gather ingredients. Preheat oven to 400 degrees Fahrenheit. Spray a 9 x 13 baking dish with non stick spray for easier cleanup.

    Place scalloped potatoes in bottom of dish. Sprinkle 1 cup cheese over potatoes.

    Mix the 2 seasoning packets with the creamed soup. Add 2 1/4 cups milk and stir to combine.

    Place pork chops over potatoes. Cover with soup mixture. Add frozen broccoli around top of dish.

    Bake uncovered 30 -45 minutes depending on thickness of chops. (I had to remove my chops to a plate and cover after 20 minutes to keep from overcooking)

    10 minutes before removing from oven sprinkle canned onion rings on top. Let dish rest 5-10 minutes before serving allowing the scalloped potato sauce to thicken.
