Soya Khaman Dhokla brings a healthy twist to the traditional favorite Khaman Dhokla by combining Soya flour with besan or gram flour . This peps up the iron, folic & protein content of this desi snack making it a healthier version.

Assemble all the ingredients.

Combien roughly chopped green chilli - ginger - garlic, lemon juice, sugar,salt, oil & 1/4 cup water in a mixer jar. Blend to a smooth paste.

Now add the flour mixture & 1/4 cup of water & blend everything together to make a smooth paste. Keep aside for 5 minutes.

In the meantime grease the thali / plate. Heat both the steamer (with water),& the greased thali.

Add eno fruit salt & 2 tsp of water on it. Blend the batter again.To check if the consistency of the batter is proper, invert the spoon & wipe the batter from the spoon. If the batter wipes off smoothly, the batter is perfect. See pic below 👇. Now immediately pour the batter in the steamed thali & steam the batter for 15 minutes.

Open the steamer & gently bring out the steamed Dhokla thali. Cool & cut into pieces.

Tempering : Heat oil in a pan,add mustard seeds & let them splutter. Add sesame seeds, curry leaves & green chillies. Add water & sugar. Cover & cook for 3 minutes, stirring occasionally.

Cool the tempering till lukewarm. If you pour hot tempering / tadka on the Khaman, the Khaman will go down. Pour this tempering evenly on the Khaman Dhokla & garnish with chopped coriander.

Serve Khaman Dhokla with green chutney or fried chillies.

Note : This is a more healthier version of popular Gujarati snack as it uses soy flour with besan & semolina.

Also note these Soy Khaman Dhokla does not use citric acid or cooking soda but Eno Fruit Salt is used instead to make it more healthier.Citric acid is very harmful to the body.
