Cooking Instructions
- 1
In a jug or bowl, combine the water, yeast, and 1 tsp of sugar and 1 tsp Flour. Let the mixture sit until it’s foamy on top, about 10-15 minutes.
- 2
In a large mixing bowl or stand mixer fitted with a paddle attachment, combine the flour, salt, and remaining tablespoon sugar. Add the yeast mixture, oil, and yogurt, and mix to combine. Knead the dough, either in the stand mixer on medium speed or by hand on a clean work surface, adding more flour if needed, until it’s soft and slightly sticky but not really stuck to sides, 7 to 10 minutes.
- 3
Transfer the dough to an bowl lightly sprayed with oil, cover with a towel or plastic wrap, and let rise until it’s doubled in size, about 1 - 1.5 hours. I cover bowl with damp clean tea towel and put into oven with a bowl of water just boiled from kettle.
- 4
Remove from over and pre heat to 250c with a large metal skillet on middle shelf.
- 5
Turn the dough out onto a clean work surface and divide it into 12 equal parts and roll into balls. Cover with tea towel and let rise an additional 20 minutes.
- 6
On a floured work surface, push down eat ball and Roll out into circles that are ¼ to ½-inch thick. Place them onto the baking sheet cover. Bake, one sheet at a time, until they’re puffy and lightly browned on top about 2 mins then using tongs turn over for another 1 min. Transfer the pitas to a wire rack to cool. repeat with all.
- 7
Allow to cool for a few mins then serve - or allow to completey cool and freeze. They are so perfect they wont stay frozen for long :) ENJOY

This is a small batch recipe for 3 medium pita breads. The secret to getting them to puff up into pockets is a super hot oven (at least 260°C/500°F). I recommend sticking to white flour for this because it seems whole wheat flours don't do a good job of rising well (which means no pocket!).Great for falafel, or any kind of sandwich fillings you like. Here are a couple of my falafel recipes if you need one ;)Regular Chickpea Falafel: https://cookpad.wasmer.app/us/recipes/282549-no-fail-chickpea-falafelBeet Falafel: https://cookpad.wasmer.app/us/recipes/246975-beet-falafelButternut Squash Falafel: https://cookpad.wasmer.app/us/recipes/283109-butternut-squash-falafel Felice -

I love pita bread, so I attempted to make it at home since it's not easily available. So simple, since the dough only needs to rise once.Adjust the baking temperature to suit your oven. It was slightly high for my gas oven, so I burned them. Recipe by Kittymama cookpad.japan -

Puffy and Chewy Pita Bread with All-Purpose Flour Puffy and Chewy Pita Bread with All-Purpose Flour
I was amazed at the pita bread I ate in a Turkish store, so I came up with this recipe for a puffy pita using the same dough as naan. The tips for puffy pita are to allow the surface to dry a bit after rolling, bake them with the bottom moist side up, and to bake at a high temperature for a short amount of time.By adding baking powder, I was able to get the dough to puff up nicely.
