This morning, I was reminiscing with @irene_guirao about how our grandmothers would stir the batter with so much love, adding the eggs one by one, patiently watching how the dough came together, and always with the best ingredient of all: love!

The day finally arrived—the recipe and the year to enjoy salt cod fritters just like we did when we were kids! This morning, I was reminiscing with @irene_guirao about how our grandmothers would stir the batter with so much love, adding the eggs one by one, patiently watching how the dough came together, and always with the best ingredient of all: love!

In a pot, combine the water, butter, and a pinch of salt. Stir until the butter is melted.

Remove from heat and add the flour. Stir until the dough comes together.

Let the dough cool to room temperature. Meanwhile, prepare the garlic and parsley paste. Finely chop the garlic and parsley, then mash them together in a bowl with a pestle until you have a paste.

Cut the salt cod into small pieces. Using kitchen scissors makes this easy.

Add the eggs to the cooled dough one at a time. Add one egg, stir until fully incorporated, then repeat with the remaining eggs.

Add the garlic-parsley paste and the salt cod to the dough with the eggs. Mix well.

Heat light olive oil for frying. When the oil is very hot, drop in 5 spoonfuls of batter. Fry for 1-2 minutes, then turn them over.

Fry for another 1-2 minutes, then remove the fritters and drain on paper towels when golden brown.

Repeat until all the batter is used.
