Ofe Achara is a traditional soup that is peculiar to the people of Abia State in Nigeria West Africa. It is a delicacy cooked during special occasions like traditional marriage and the likes. It is rich in proteins and veggies.

Steps

Place a clean pot on fire, add a cup of water 250ml, wash your proteins adding salt pepper and seasoning cubes and boil until they are tender

Add more water to the pot, add already peeled, cut into small pieces and washed Achara into the boiling pot, allow to cook for 5minutes.

Add already ground egusi paste moulded into small balls to the boiling pot and allow to cook for 10minutes

Add 50ml of palm oil and allow to cook for 5minutes,.

Add ground pepper and crayfish

Allow to boil for 2 minutes

Making sure you stir to allow ingredients incorporate into each other.

Add any thickener of your choice (ukpo, achi, ofo or akparata). Stir and allow to boil for 5minutes.

Add your sliced and already washed uziza leaf and okazi respectively.stir and allow to cook for 3 to 5 minutes. Add salt and (seasoning cubes optional) to taste. Leave to cook for another 3 minutes

Serve with any swallow of choice
