Preheat oven to 200°C.

Season Chicken and bake in oven for 15 minutes. Turn over and bake for another 10 minutes.

Meanwhile, combine Garlic, Onions and Chili in a food processor and mince.

Heat 90 ml of Coconut oil in a large Dutch Oven. Add minced Garlic, Onions and Chili and fry.

Add Shrimp paste and combine. Continue to simmer while frying. Add a little Oil if the Oven starts boiling instead of frying. Fry till Onions are browning.

Transfer the Chicken pieces and sauce for the baking tray to the Dutch Oven. Stir occasionally while Chicken keeps cooking.

Heat 35 ml Olive Oil to a large skillet and fry Eggs in batches.

Add Soy Sauce and Fish Sauce. Stir to combine. Add the remaining Pepper and Salt.

Once Chicken is cooked through, turn off the heat and add the Basil to the Dutch Oven.

Serve on bed of Lettuce and garnish with a Lime wedge.
