A rich, comforting one-pot dish perfect for chilly evenings.

Heat the olive oil in a large pot over medium heat. Add the pork shoulders and sear for 10 minutes on one side.

Flip the pork, add the chopped onion, and cook for another 10 minutes, stirring occasionally.

Stir in the Worcestershire sauce and balsamic vinegar. Cook for 5 minutes to allow the flavours to blend.

Add the quartered potatoes, sliced carrots, and bay leaves. Pour in just enough hot water to cover all the ingredients.

Simmer uncovered for 60–90 minutes, or until the potatoes are tender and most of the water has evaporated. Stir occasionally.

If using, crack in an egg during the final minutes of cooking and allow it to poach to your liking.

Season to taste with salt and pepper. Serve hot, optionally with crusty bread on the side.
