Made with spring mushrooms, sweet peppers and onions, canned olives and canned tomatoes. The sauce is dipped in crusted sour dough bread. If you do not have access to rabbit, you can substitute a small whole cornish hen of 2 1/2 pounds, or a pheasant of 2 1/2 pounds and use this same recipe.

Start dinner with easy and quick gourmet easter egg appetizers.

Cut the whole rabbit with kitchen scissors as shown in this center picture from famous hunter Hank Shaw.

Spray the rabbit pieces with olive oil, roll in oatmeal flour, herbs, and spices, lay on deep baking tray, broil at 500F degrees till a crust starts to develop, 10 minutes each side

Top rabbit pieces with sliced mexican green onions, garlic, sliced mushrooms, sliced bell peppers, broil 10 minutes at 500F degrees

Turn heat to 350F degrees, add canned pitted black olives in their juice, whole canned peeled tomatoes in their juice, simmer an hour till sauce is thick. Taste, adjust seasoning to your liking.

Start charcoals in barbecue, lay stone tile over grill, when hot, fresh green asparagus on top, spray with some olive oil, grill till the tips develop a golden crust. Taste, should be crunchy.

Serve over quick and easy to make fresh fettucini pasta, boil al dente, 8 minutes. Broad flat pastas will absorb the delicious sauce better than narrow round pastas.

The sauce is delicious, and there is enough left for both dipping and pasta. Dip leftover sauce and gravy and vegetables with hard crust rolls. Enjoy.
