1000. California Farm Rabbit Cacciatore Dinner

Cacciatore means hunter. Jackrabbit hunting season is open all year in California. Young spring rabbit is an easy oven dinner. Delicious too, rabbits are juicy and tasty in spring. Rabbits are easier to cut in individual portions than chickens, following the kitchen scissor method of famous hunter Hank Shaw, see below. I bought a farm raised rabbit for this recipe, I broke my shooting arm.
Made with spring mushrooms, sweet peppers and onions, canned olives and canned tomatoes. The sauce is dipped in crusted sour dough bread. If you do not have access to rabbit, you can substitute a small whole cornish hen of 2 1/2 pounds, or a pheasant of 2 1/2 pounds and use this same recipe.

I teach people at the farmers market to grow small scale fruits and vegetables. My grandparents and parents taught me growing, cooking and preserving home grown fruits and vegetables, eggs, meats and fish. I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste. These are the global, organic and vegan family recipes we use.
