Ingredients

8 servings
  1. 1 pounddry lentils
  2. 8 cupswater or vegetable stock
  3. 2 tspsalt
  4. 3 Tbutter/bacon fat/olive oil
  5. 1 Cdiced onion
  6. 1 Cdiced celery
  7. 1 Cpeeled and diced carrot
  8. 2 tspminced garlic
  9. 3 Tred wine
  10. 2 Tlemon juice
  11. 2 Tbrown sugar
  12. 1 Tred wine vinegar

Cooking Instructions

    Combine lentils, vegetable stock, and salt in soup kettle. Simmer, covered, until Lentils are soft. (about 1 hour)

    Meanwhile, melt butter, then add garlic, onion, celery, and carrots. Cook until just soft.

    To the lentils, add garlic, onions, celery, carrots, tomato, red wine, lemon juice, brown sugar, and red wine vinegar.
    Let simmer about 15 minutes. Add salt and pepper to taste.
