Crispy Venami Prawns Fry

Prawns are considered as healthy food option being low in calories, good source of protein and other nutrients.
It is a versatile ingredient that can be used in variety of dishes including stir fries, deep fries, curries, grill, biryani or more.
Prawns usually take very less time to cook. If overcooked, they turn rubbery or bit harder to chew. It is a belief that when Prawns are cooked they form a C - Shape which means they are complete and done or don't require further cooking but if they form O - Shape, they are overcooked.
C - means Cooked
O - means Overcooked
Don't know how true it is! 😊
There are various species of prawns like Tiger Prawns, White Prawns, which are called as Venami or Vannamei prawns by the localites in my region. Tiger Prawns or Venami Prawns are distinct species.
It is believed that Tiger Prawns is a sea shrimp native to Indonesia having striped pattern on its shell which makes them to call as 'Tiger Prawns' whereas Venami Prawns/Vannamei Prawns originally comes from pacific ocean and has a high level of market demand. They are known as white Prawns due to their translucent white body.
In my region, Prawns are enjoyed mostly in the form of Biryani or Deep fried. Therefore, I made Vannamei Prawns which is highly consumed here. Made simply by mixing prawns with all the spices and then deep fried. Though Vennami prawns can be enjoyed in the form of Biryani but I preferred to make it simple yet SPECIAL!

Ingredients

  • 1 kgPrawns
  • 2 TablespoonsGinger Garlic Paste
  • 2-3 tablespoonsRice Flour
  • 1/2 teaspoonBlack Pepper Powder
  • 1-1/2 tablespoonSalt
  • 1 teaspoonGaram Masala
  • 1 teaspoonTurmeric Powder
  • 1 teaspoonRed Chilli Powder
  • 2-3 tablespoonsLemon Juice
  • 2 cupsOil for Deep Frying
  • To make Slurry or Coating before Deep Frying (optional)
  • 1 cupBread Crumbs
  • 3-4 TablespoonsRice Flour
  • 3 TablespoonsWater to make slurry
  • To Garnish
  • 1 teaspoonChopped Coriander Leaves OR Fried Curry leaves
  • 2Lemon Slices

Steps

    To begin with, Peel, cut and wash prawns thoroughly with water or devein them.

    Now, take all other ingredients together. In a mixing bowl, put washed prawns and add all the spices like ginger garlic paste, turmeric powder, Red Chilli Powder, Salt, black pepper powder, garam masala or Rice Flour. Lastly, add lemon juice or a dash of water. Mix them well and allow to rest for 30 minutes to 1 hour. Note - You may add Curd for Marination and increase the Marination time.

    After 1 hour, heat oil in a wok. Also, prepare slurry for coating prawns and then deep fry.Put Bread Crumbs on a plate and make rice flour slurry simply by mixing rice flour with water. Note - You may use any other option to make slurry like eggs or any other flour.

    Now, take one marinated prawn and put in bread crumbs. Coat well and then dip into rice flour slurry and bring it back again to the bread crumbs for final coating.

    Deep fry all the prawns in batches on medium heat for 3 to 4 minutes until they turn golden or crispy. Transfer to plate by draining excess oil. Note - I preferred to have some prawns without the coating of bread crumbs as they can be deep fried without any coating.

    Lastly garnish with chopped coriander leaves. Ready to enjoy crispy yet soft yummilicious Venami Prawns.
