I had never made this recipe before, but I remembered an aunt of mine who used to make them deliciously. It's a very old recipe. Some people coat them in flour, others in breadcrumbs. I make them my own way.

I had never made this recipe before, but I remembered an aunt of mine who used to make them deliciously. It's a very old recipe. Some people coat them in flour, others in breadcrumbs. I make them my own way.

Boil the potatoes and mash them.

Soak the salt cod in water overnight to remove excess salt.

Mix the mashed potatoes and the salt cod together.

Add the garlic and parsley.

Add the whole egg.
- 6
Beat the egg whites well and shape the mixture into small balls as desired.

Heat plenty of oil (I used olive oil) in a skillet over the stove. When the oil is very hot, dip the balls in the beaten egg white and fry them.

When they are golden brown, remove them from the oil and place them on a plate lined with paper towels to drain excess oil.
