A refreshing summer salad -- most popular amongst the Maharashtrians .
A summer wedding thali is not complete without a myriad of pickles & kachumbers ie salads which are not only cooling but also eye - catching & delicious to eat .These kachumbers or salads are served chilled .
The refreshing crunch of cucumber with aromatic spices with a piquant peanut crunch as you gnaw makes this ' Khamang ' far more superior than any other summer salad . The nutty savory, sweet & sour taste of this Khamang tickles your tastebuds & you have to try it to believe it.
This koshimbir is eaten fresh only & freezing it is not advisable due to the water content in the cucumbers it loses all its crunch & texture . Assemble this Koshimbir with all the ingredients bar the salt , which should be added just before serving to avoid it getting soggy .
This cool Koshimbir makes a good appetising snack on it's own too . It goes delightfully well with crackers & nachos . It is healthy, vegan & definitely soothing to all the palates .

Chop the cucumber with skin finely.

In a bowl take chopped cucumber, chopped coriander, peanuts, coconut, sugar & a generous squeeze of lime.

Prepare the tempering in a small pan by adding oil & mustard seeds.Let the mustard seeds crackle, add green chillies, curry leaves & asafoetida. Add this tempering to the Koshimbir & mix.

Finally add the salt & mix again & serve immediately.
