Gather the necessary ingredients and place them near the cooking area.

Soak the beans in a bowl with 5 cups of boiling water for 4 hours. cook in a pressure cooker. Follow manufacturer’s instruction for usiong the cooker. Cook until soft. do not overcook. Drain the cooked beans You may place a plate over the bowl. place potatoes on the plate. So that you can cook them both at the same time
Peel the skin of the potatoes and cut them into small pieces. - 4
Heat oil in a heavy bottomed pan over medium heat, add mustard, fennel, let the seeds burst open. Stir in methi and asafetida. Add the dals,. When the dals turn golden brown, and aromatic. sauté the onions and green chillies; when the onions turn brown, add the ginger, garlic, turmeric powder, and curry leaves and sauté for 4 minutes. Add the zucchini and sauté. Add 3 cups of water and bring to a boil, add the cooked adzuki beans and stir.

Add the cooked adzuki beans and stir.
Add the potatoes, masala powder and stir. Simmer the flame. After 5 minutes, turn off the stove. Add the coconut milk. Add salt and stir. garnish with chopped cilantro
Remove from the stove and place in a serving bowl. Taste and serve. When mixed with rice and ghee it tastes divine. You can also serve it with chapatis or parantha
