Ingredients

2 people
  • 220 gramsfusilli
  • 2medium zucchini
  • 40 gramspecorino cheese
  • 6-7basil leaves
  • Extra virgin olive oil to taste
  • 20 gramsalmonds, toasted
  • Salt to taste
  • Fresh black pepper to taste

Steps

  1. 1

    Put water to boil with some salt. Dice the zucchini.

    Once water boils, put the pasta in the water.

    In a blender, or a tall container with an immersion blender, place all ingredients. Purée until mixture reaches a smooth consistency. Pour in a serving bowl.

    Add pasta and some pasta water to reach desired consistency. Mix.

    Serve and garnish with more pecorino, almonds and basil.
