Spaghetti Aglio Olio e Peperoncino

Steps

Cook spaghetti in salted boiling water until al dente.

Heat olive oil in a pan over medium-low heat and add garlic. Sauté until golden.

Add chillies and parsley stems.

Add a ladle of pasta water to the pan to prevent burning. Take out the parsley stems.

Add the spaghetti and emulsify oil and pasta water over low heat to make the cream.
- 6
Add the parsley and serve. Enjoy!
Tips
Make sure not to burn the garlic; it should be golden for the best flavor.
