Ask the fish seller to clean the snakehead fish, remove the guts and scales. At home, rinse the fish, rub the outside with vinegar and salt, and remove any blood clots inside. Rinse again with clean water. Drain by placing the fish belly-down in a colander to let the water drip out.

Cut the pork belly into pieces about the size of your thumb. Marinate the pork and fish with: 1 tsp caramel sauce, 1 tbsp fish sauce, 1/2 tsp salt, 1 tsp minced shallots, and 1 tbsp sugar. Let marinate for 30 minutes. If marinating longer, cover and refrigerate.

Sauté the shallots until fragrant. Place the fish on top and pork on the bottom in the skillet, then pour in the marinade. Bring to a boil. Add 1/3 cup boiling water. Add the chili peppers, 2 tbsp fish sauce, and 1 tbsp sugar. Lower the heat and simmer gently for about 30 minutes. Turn off the heat. I like to braise it twice so the flavors soak into the fish better.

At this point, add the black olives. These can be frozen and saved for later use. Turn the heat back on and bring to a boil again.

Continue simmering over low heat until the liquid is almost gone. Serve hot with rice for a delicious meal.
