Ingredients

  1. 4 tbsppeanut butter
  2. 4 tspsoy sauce
  3. 2 tbsphoisin sauce
  4. 2 tspsriracha
  5. 1 tspground ginger
  6. 4 tbspwarm water - add up to 2 more as needed to thin
  7. 2 lbsshrimp, peeled, tails off
  8. 2large zucchini, spiralized and cut into 6 in lengths
  9. 1 cupmatchstick carrots
  10. 6fresh basil leaves, chopped
  11. 1/4 cuppeanuts, chopped
  12. 4radishes, sliced thin
  13. 3 packsramen noodles, any flavor - we don't use the seasoning
  14. Lemon juice

Steps

  1. 1

    Combine first six ingredients / stir until smooth. Set aside.

  2. 2

    Boil water in stock pot and cook shrimp until pink - remove from water and set shrimp aside.

  3. 3

    Add zucchini and carrots to boiling water. Cook four minutes and remove to large colander to drain.

  4. 4

    Add ramen noodles to boiling water, cook four minutes and drain to colander with zucchini mixture.

  5. 5

    To assemble bowls, divide ramen, zucchini, and carrot mixture evenly into 6 bowls. Add basil, peanuts, radishes, and shrimp equally to bowls. Divide dressing among the six bowls, and flavor with lemon juice as desired. Stir and enjoy!
