Goat Cheese Quesadilla
A quick quesadilla. I wasn’t sure what to have for dinner, so I put together what I had in the fridge and came up with this recipe, which turned out really tasty.
Goat Cheese Quesadilla
A quick quesadilla. I wasn’t sure what to have for dinner, so I put together what I had in the fridge and came up with this recipe, which turned out really tasty.

Spread cream cheese on one of the tortillas.

Slice the goat cheese, tomato, and red onion thinly, then add them to the tortilla.

Grate Parmesan cheese over the top. Add ground black pepper and chives. Place the tortilla in a skillet over medium-low heat. Pour 1 tablespoon of heavy cream over the filling and cover with the other tortilla. Let it cook until golden brown on both sides.

Cut into triangles. Enjoy!
