Gnocchi with Mushrooms and Smoked Tofu 🍄🍄🟫

In a skillet, add the mushrooms, onion, salt, parsley, and olive oil. Add about 1/2 cup water (120 mL) and cook over medium heat, stirring occasionally. A few minutes before the end of cooking, add the smoked tofu cut into cubes.

Meanwhile, bring a pot of water to a boil. When the sauce is ready, use the boiling water to cook the gnocchi.

Add the cooked gnocchi to the sauce, stir, and serve with an extra sprinkle of parsley.
