Kancha Aam or Raw Mango is enjoyed in many ways during summertime - one such way is Morabba
Morabba is very popular in West Bengal and one can make Morabba of any vegetables but I feel Kancha Aam tastes best. Of course I love Kancha Aam so I think it in that way.
Care should be taken that Kancha Aam should not be fully boiled as it shouldn’t be mushy

Wash the Kancha Aam, peel and cut into small cubes, in a pot boil water, add salt and turmeric powder, add Kancha Aam cubes and boil 50%. Drain and set aside

In a wok add 1/2 cup sugar and water and stir continuously to make sugar syrup, the syrup should be 1 string

Add the boiled mangoes and mix well, add saffron strands and salt and cook until mangoes mix well, set aside

Pour into a glass jar and eat to enjoy 😊
